Mom’s Pimento Cheese
1 lb extra sharp cheddar cheese
Miracle Whip (Mom says – not optional) – enough to get the right texture, about 4 good spoonfuls
a LITTLE BIT of garlic powder
a jar of diced pimentos (or a little more), drained (but save the juice, in case you need it later)
a little bit of Frank’s hot sauce (according to me)
Let the cheese soften on the kitchen counter for awhile, grate it, mash the cheese together with the Miracle Whip till smooth-ish, add the garlic, pimentos, Frank’s and mix well, adjust to taste, shape into a ball (optional), eat on crackers. Or, celery. Be happy.
